Recipes Even I Can Follow

One of the things I struggle with every week is cooking. I’m not a great cook, but I got a lot better after I found Crockpot365 and Their recipes are so easy even I can follow them. So, here are a few of my favorite recipes, that I cook regularly.

Taco Soup
This one uses a lot of canned vegetables, which makes me super happy because I don’t have to cut up anything. It also makes huge portions. I usually freeze half of it to eat a week or two later.

Autumn Pork Chops
This does require chopping two apples and an onion, but that’s all. Sometimes I get lazy and don’t grind up the spices, it still tastes great. I love that there are 2 tablespoons of butter in this dish. Every dish should have that much butter. I always say that butter (and bacon) make everything taste better.

Moroccan Lentil Soup
This is vegetarian and super yummy. I put less cinnamon and nutmeg than she suggests because it can overpower the rest of the flavors.

Thai Basil Eggplant
I brown ground pork in a pan first, then set it aside. I also sauté an onion before putting in the peppers and garlic. Once the eggplant is soft and translucent, I put the pork back in and add the fish sauce. I don’t add any sugar, but I do add salt and pepper.

Butternut Mac ‘n’ Cheese
This takes more time than opening a box of mac ‘n’ cheese, but it’s worth it. My son even liked it, and he doesn’t tend to eat vegetables. You can substitute vegetable broth to make this vegetarian. For my kids I left out the garlic, onion, and parsley.

Banana Bread
I have made this so many times, I’ve gotten quite good at it. The only change I made is that I mix dark chocolate chips to the batter just before I pour it into the loaf pan.

One thing that makes it easy to follow the recipe is that I got these refrigerator clip magnets to hold the recipe at my eye level. I just attach the magnet to the range hood or the cabinet pulls while I’m working.

    Here’s a link to that honey soy chicken recipe that I use. If I use boneless chicken, I reduce the cooking time by about half. I use orange juice instead of lemon and add some ginger because I like it! 🙂 It’s a favorite with the kids.

    The traditional Filipino chicken dish of Adobo is super easy, too:

    3 lbs chicken (bone in)
    1 cup apple cider vinegar
    1 cup soy sauce
    12 garlic cloves (whole – that’s important)
    1 tablespoon ground black pepper
    2 bay leaves

    Put it all in a pot & bring to a boil. Turn chicken to make sure it all gets coated. Reduce heat to low, put on the lid and let simmer for, well, however long you wish – 1-3 hours. Sometimes I add 1/2 cup of coconut milk, too. Not necessary, but nice that way, too. Serve with rice.
